Grown organically, the vines yield approximately 3,000 kg per hectare, resulting in concentrated fruit flavors.\u003c\/p\u003e\n\u003cp\u003eVinification takes place in stainless steel tanks and concrete eggs, with a short pre-fermentation maceration. Fermentation occurs at low temperatures using native yeasts. Aged for a further 12 months in bottle before release. The wine has been subject to an undisclosed period of indigenous malolactic fermentation. \u003c\/span\u003e\u003c\/p\u003e\n\u003cdiv title=\"Page 6\" class=\"page\"\u003e\n\u003cdiv class=\"layoutArea\"\u003e\n\u003cdiv class=\"column\"\u003e\n\u003cp\u003e\u003cspan\u003eA rich purple wine with smooth tannins and good acidity, relatively short for a high-altitude malbec. Black fruits such a plum and blackberries open this wine, in conjunction with red jammy fruits which then gives way to creamy cheese and butter.
